Job Description:**Job Summary:**
This position is responsible for the comprehensive management of all kitchen operations, encompassing food production and stewarding functions, with a strong emphasis on upholding stringent hygienic standards and practices. Key responsibilities include staff training and development, ensuring consistent food product quality that meets and exceeds customer expectations, and optimizing departmental profitability. This role requires collaborative engagement with various departments and stakeholders to achieve organizational objectives.
**Core Duties and Responsibilities:**
* Oversee and manage all aspects of Food Production and Stewarding operations to maximize departmental profit margins.
* Collaborate with the Director of Food and Beverage in the planning and execution of successful Food and Beverage initiatives, both within the hotel and externally.
* Maintain a current and comprehensive repository of hotel policies and procedures.
* Partner with the People Services Manager to optimize staff productivity and performance within the department.
* Develop and implement workforce planning strategies to address future staffing requirements.
* Conduct thorough training needs analyses for kitchen staff and, in coordination with the Training Manager as appropriate, design and implement targeted training programs.
* Administer probationary reviews and formal performance appraisals in accordance with established company guidelines.
* Maintain accurate and up-to-date staff records and approve employee leave requests.
* Provide coaching, counseling, and disciplinary action to staff members, offering constructive feedback to facilitate performance improvement.
* Actively participate in the development of the hotel’s revenue plan and marketing programs.
* Establish, in conjunction with the Finance Director, appropriate minimum and maximum inventory levels for all food, materials, and equipment.
* Collaborate with the Finance department in the preparation and management of the departmental budget.
* Demonstrate and enforce adherence to Occupational Health and Safety (OH&S) policies and procedures, ensuring safe working practices for all personnel and reporting any potential hazards.
* Maintain awareness of duty of care obligations and comply with all applicable occupational, health, and safety legislation, policies, and procedures.
* Maintain familiarity with property safety protocols, first aid procedures, and fire and emergency procedures, operating equipment in a safe and responsible manner.
* Take immediate action to rectify hazardous situations and notify supervisors of potential dangers.
* Document security incidents and accidents in accordance with hotel protocols.
* Implement and maintain Hazard Analysis and Critical Control Points (HACCP) standards.
* Undertake additional responsibilities and tasks as assigned, contingent upon the evolving needs of the business and the hotel.
