Job Description

JOB SUMMARY:Responsible for the full running of the butchery department in consultation with the Head Chef, Catering Manager or Camp Boss/Manager. Train and supervise the junior staff in the department. Participate in practical tasks of butchery preparation and presentation as per PSGS’s policies and procedures.KEY RESPONSIBILITIES: Applying and following the contractual obligations, PSGS’s policies and procedures Following, implementing and maintaining all ISO and HACCP standards and requirements Providing guidance and training, including setting performance standards and monitoring performance Organizing the daily tasks of the butchery team to prioritize, organize, and work together to accomplish set tasks Estimating in consultation with the Head Chef the requirements and requisition meat supplies to maintain inventories Coordinating with the stores’ management team to follow the availability of various food items Receiving, inspecting and storing meat and meat products according to PSGS’s food safety requirements to ensure meat quality Determining and maintaining food costs in consultation with the Head Chef while adhering to set budgets Ensuring safety training and proper usage of equipment’s and premises is given to junior and untrained staff Leading the team positively for the development of the enterprise Act as a food safety team member Performing other duties as directed
